Ingredients

3/4 cup frozen corn kernels, thawed and drained (or kernels from 1 ear corn)
3 tablespoons extra virgin olive oil, divided
1 medium eggplant, peeled and diced (about 3 cups)
4 garlic cloves, finely chopped
1 medium white onion, peeled and chopped
1/2 jalapeño pepper, minced, more or less to taste
1 tablespoon ground cumin
1/2 teaspoon ground cinnamon
1 teaspoon ground coriander
1 teaspoon smoked or regular paprika
1/2 teaspoon chili powder
Sea salt and black pepper
2 (15-ounce) cans no-salt-added black beans, rinsed and drained
1 (14.5-ounce) can fire roasted or regular diced tomatoes with juices
1 cup gluten-free vegetable broth
1 tablespoon fresh lime juice
2 tablespoons dairy-free semi-sweet chocolate chips

Method

In a large heavy skillet, roast corn kernels over medium-high heat, stirring constantly, until beginning to brown, 3 to 5 minutes. Remove and set aside. Add 2 tablespoons of olive oil to the skillet over medium heat and cook eggplant with a pinch of salt until golden, about 10 minutes. Set aside.

In a large saucepan, heat remaining tablespoon of oil over medium heat. Add garlic and cook for 1 minute, then add onion and cook until translucent, about 5 minutes. Stir in jalapeño, cumin, cinnamon, coriander, paprika, chili powder, salt and pepper. Cook for 1 minute, stirring frequently. Stir in tomatoes, beans, vegetable broth and lime juice. Bring to a simmer. Simmer 15 minutes, stirring frequently. Stir in corn and eggplant. Add chocolate and stir just until melted. Taste and adjust seasoning. Serve immediately.

Flowers whither and die after a couple of days...

You need to provide them with sufficient sunlight and water..

The water smells really bad if you don't drain it and replace..

Some are thorny..

They are so many to choose from and it takes forever choosing a good combination..

Flowers are beautiful..

I currently have the Diana+ F, the bigger sister. Shooting with a toy camera makes me feel like a kid again. What I like about the mini is that it's already adapted to 35mm film. Today I took part in an event held by Tri-County Dental Society called "Give a Kid a Smile" at the RCC Dental Hygiene clinic in Moreno Valley. This is a non-profit annual event where clinicians, assistants, and hygienists volunteer their time in order to provide service for individuals who cannot afford oral treatment. Children from 12 years and under are seen for free and receive the best treatment we had to offer. I found myself so lucky and grateful for such a great experience. Serving those who are unable to provide for themselves is a very humbling. The way the kids behave is very cooperative, unlike other experiences I have had in the past.

I really enjoyed offering my service to the community and this experience has only strengthened my will to become a clinician. A big thanks to my team and those who I have met, Dr. Nichols, Marcia, Geni, and Barbara.

Today is the beginning of a new lunar year. Such an event is often celebrated in areas with a large degree of Chinese influence.

One characteristic associated with this event is the distribution of the red envelopes from the elders to the young. Such envelopes contain money that may range from a couple of dollars to even a few hundred. The amount of money in each envelope is an even number (odd numbered money is given during funerals). These red envelopes contain money that is used to suppress the evil spirits.

Another important tradition for the Chinese new year is the dancing of the dragon/lion. The beating of the drums and the movement of the animals scares away evil spirits.

So today is the beginning of the year of the Ox. One important ox is the infamous Mr. President Barack Obama. The ox is characterized to be stubborn, inspiring, patient, thoughtful, good manual dexterity and leadership qualities.

I have been instructing the Pathfinder club at LSU and for the past two weeks the kids have been learning tips and tricks of photography. It is important to know that no matter where you are, there is a subject that if captured, will make a great photograph.

The assignment for the previous week was to take 10 random shots and to show the rest of the class so that we all can express what we get from the picture. I was surprised with the outcome. We had some great macro, black and white, sepia, portrait, and landscape shots.
